Milk pie with a hint of lemon and loads of syrup

Since my favorite patisserie on Lesvos closed, all the flavours I grew up with were all of a sudden gone. Not to mention my wedding cake, which was also made by the same patisserie :( Since then, my aunt and I are on a quest to replicate our favorite desserts, cakes and cookies we have been missing the last couple of years.



One of my favorites was the galaktompoureko - milk pie in syrup with a lemon flavor. I am happy to announce that I came quite close with this recipe.



Milk pie with a hint of lemon and loads of syrup

ingredients for the cream
  • 1 tea cup of semolina
  • 1 tea cup sugar
  • 1 lt milk
  • 5 eggs
  • 2 vanilla
  • zest from one lemon
  • 400 gr filo dough 
  • 50 gr of butter for the cream
  • 100 gr butter or the dough 

ingredients for the syrup
  • 1 lemon juice
  • 1/4 of lemon zest
  • 3 tea cups of sugar
  • 3 tea cupsof water
  • 1 cinnamon stick

instructions for the cream
  1. Beat the eggs with the sugar, butter and one vanilla.
  2. Bring the milk to boil, including the other vanilla and lemon zest.
  3. Add the semolina to the boiling milk and stir until it becomes thick.
  4. Take off the fire and add the egg mix, while stiring.
  5. Lay 3 sheets of filo dough, while spreading the butter inbetween then with a brush.The sheets should exceed the form.
  6. Continue to do so until you have used half of the dough sheets.
  7. Pour the cream in and spread evenly.
  8. Continue with the rest of the dough sheets in the same fashion.
  9. Fold the dough sheets and bake in 180C for 30 minutes, using the top and bottop elements ofthe oven.
  10. Add the syrup warm when your pie is cold.

instructions for the syrup
  1. Bring all to boil for 8 minutes.

Lemon is the flavor :)



This is how the mix looks after adding the eggs.



Make sure to leave the sheets hanging outside of your baking pan. 



Spread the cream evenly.



Add the rest of the sheets without letting them hang outside of the baking pan this time.



Fold the sheets into an envelope.

Don't forget to pour the hot syrup on the cold pie. Before pouring the syrup, cut is squares to allow the syrup to spead into your pie.



For extra calories serve with ice cream ;)
