Meina's exotic banana cake

This cake is the most amazing banana cake I ever tasted. The recipe was given to me by my dear friend Meina and altered by me, so it is only fare to name it after her ;)

You can eat it plain, or use it as base a cake with icing.


Meina's exotic banana cake

ingredients for the cake
  • 6 eggs
  • 1 tea spoon of rum
  • 1 table spoon of olive oil
  • 300 gr sugar
  • 1 vanilla
  • 200 ml milk
  • 500 gr flour
  • 1/2 tea spoon baking powder
  • 1/2 tea spoon salt
  • 2 ripe bananas
  • 1 tea spoon baking soda
instructions for the cake
  • Beat the egg whites with the rum until stiff.
  • Beat the oil, with the sugar & vanilla adding the yolks and the milk.
  • Add the flour, including the baking powder and the salt. 
  • Mush the bananas with the spoon and add the baking soda.
  • Add the banana mix to the dough mix.
  • Fold the dough into the egg white mix, using a silicon spatula.
  • Pour the dough into a buttered and floured cake form.
Bake in pre-warmed over, with air, for about 45-55 minutes, 180C and let it cool down. Now you can start working on the icing.

ingredients for the mon-chou gream
  • 400 gr mon chou
  • 360ml water
  • 80 gr powder sugar
  • 160 gr butter cream mix

instructions for the mon-chou cream
  1. Beat the mon-chou for  a couple of minutes.
  2. In the meanwhile add the sugar to the water and whisk.
  3. Add the butter cream mix to the water & sugar mix.
  4. Add the mix to the mon-chu and let the machine beat until the mix becomes uniform. 
  5. Put in the fridge for 30 minutes.
Cut the cake in two layers, spread the mon-chu cream and eventually sprinkle some chocolate flakes, to give a crunchy effect when taking a bite ;)

Use the rest of the icing to cover the cake and sprinkle some sprinkles to cheer it up.
