Jonathan turned 3 last week and he had to bring treats at daycare. The crowd was between 2-4, so what better than cupcakes with chocolate booboo's*?
*Booboo's; anything on wheels that makes noise and is impressive to Jonathan :)
Vanilla cupcakes with chocolate frosting and booboo's
ingredients for the cupcakes (makes 24)
- 250 gr butter
- 300 gr sugar
- 2 vanilla
- 5 eggs
- 1/2 tea spoon salt
- 350 gr flour
- 2 table spoons corn flour
- 2 table spoons backing powder
- 125 gr sour cream
ingredients for the chocolate frosting
- 125 gr sour cream
- 150 gr powder sugar
- 1000 gr butter
- 1-2 table spoons cacao powder
- Candy in form of cars/trucks...etc.
instructions for the cupcakes
- Leave the butter and the eggs out of the fridge.
- Beat the egg-whites with the salt and one vanilla until stiff and put aside.
- Beat the butter with the sugar for 5 minutes.
- Add the yolks and sour cream to the mix and beat for a couples of minutes.
- Ads the flour, which already includes the corn flour and backing powder.
- Gently old the mix into the egg-whites.
- Divide the dough into 24 cupcake forms. They should by 3/4 full.
- Bake for 20-25 minutes in pre-warmed oven 180C.
instructions for the frosting
- If you don't have powder sugar you can make your own in the blender.
- Add the butter and beat until smooth.
- Add the cream and beat for a minute. Keep a 4-5 table spoons of the mix for the decoration.
- Add the cacao and beat for a minute.
- Keep cool and spread the frosting before serving.
- Decorate the top of the cupcakes with the chocolate and make road stripes with the white folder.
- Add a car candy for the booboo effect.
Make sure to beat the egg-whites until stiff.
Fold the mix gently.
You can use an ice-cream spoon to serve the dough into the cup-cake forms.
Cover 3/4 of the forms.
They will rise :)
Take them out and let them cool down.
Cover with the chocolate frosting and make a road with the white frosting.
Add the car candy, and there you go... A booboo cupcake!
