Jonathan's booboos birthday cake

My sweet boy just turned 3 in June, and he was very specific about this cake. It had to be chocolate and it had to have some diggers on it. And loads of booboos on it.



*Booboo's; anything on wheels that makes noise and is impressive to Jonathan :)



Jonathan's booboos birthday cake

ingredients for the cake.
  • 250 gr flour
  • 500 gr sugar
  • 2 vanilla
  • 5 eggs
  • 1/2 tea spoon salt
  • 350 gr flour
  • 2 table spoons corn flour
  • 2 table spoons corn backing powder
  • 125 gr sour cream
ingredients for the chocolate  filling frosting
  • 250 gr of butter
  • 1 can of condensed milk
  • 5-6 spoons of cacao powder
  • you can optionally use red fruit or strawberry jam in-between the cake layers, instead of chocolate
Decoration needed
  • yellow smarties or other yellow candy
  • a tiny digger and truck toy
  • a yellow tube of ready made frosting for icing
instructions for the cake
  1. Leave the butter and the eggs out of the fridge.
  2. Beat the egg-whites with the salt and one vanilla until stiff and put aside.
  3. Beat the butter with the sugar for 5 minutes.
  4. Add the yolks to the mix and beat for a couples of minutes.
  5. Ads the flour, which already includes the corn flour and backing powder.
  6. Gently old the mix into the egg-whites.
  7. Butter and flour your (24 cm square or round) cake form. 
  8. Pour the mix into the cake form.
  9. Bake for about an hour in pre-warmed oven 180C.
instructions for the chocolate frosting
  1. Melt the butter in a pan on low fire
  2. Add the condensed milk and whisk until smooth
  3. Add the cacao powder until and whisk
  4. Use the chocolate frosting to fill the cake and pour the rest of it on top.  
Make sure to beat the egg-whites until stiff.


Beat the sugar with the butter for 5 minutes, add the yolks, flower and sour cream.


Fold the mix into the egg whites.


Remember to butter and flour the cake form.


Do not cook the chocolate frosting, keep the fire low.


Cut the cake and fill it in with chocolate frosting (or alternatively jam).


Tip: put paper stripes under your cake before pouring the frosting over. It will have the consistency of honey, but it will become a bit harder later on.


Add the smarties and booboo's and write the name and age of the birthday boy.


Warning: kids will want to "dig" in it :D
