Super easy Tarte Tatin

I got to know this recipe at a cooking workshop I had with my colleagues. It is super easy and it can be served as a stand alone desert or with ice-cream. As you suspect from the name it is a French pie.


It was such a great fun making it with my colleagues, we enjoyed the process of baking more that the one of eating it :)

Super easy Tarte Tatin

ingredients for the dough (makes dough for 3 tarts of 20 cm form each)
  • 250 gr flour
  • a pinch of salt
  • 40 gr basterd sugar
  • 150 gr butter
  • 2 egg yolks
  • 6 spoons of water
ingredients for the apple-caramel filling per form (you will need to multiply x 3 to make all pies)
  • 40 gr butter
  • 70 gr basterd sugar
  • 1,5 kilos of apples (about 4 large apples) - peeled and cut in four.
instructions for the dough
  1. Mix the butter with the sugar using your hands.
  2. Add the eggs and water.
  3. Add the four.
  4. Don't over do it with kneeing.
  5. Make the dough into a ball, cover it in transparent foil and let it rest in the fridge for at list 15 minutes.
instructions for the filling
  1. You will need a large and heavy Tefal type of a pan.
  2. Cut the butter into cubes and add the sugar.
  3. Cover with the slices of apples and leave on low fire for half an hour. Don't stir.
  4. Keep an eye on the apples and when the caramel goes golden bruin it is ready.
instructions for the putting the pie together
  1. Open the dough and make it flat with a dough roller.
  2. Put the form on top of the dough and check if it is covered.
  3. Take the form, put the apples in with some of the caramel.
  4. Cover with the dough, using the dough roller and cut the edges with a knife.
  5. Bake the tart in pre-warmed oven (220C) for 20-30 minutes.
  6. When ready flip the tart in a plate, be careful cause the caramel is very hot.
  7. Wait for a few minutes and the cut and serve, alone of with ice cream.

Caramel can be very hot, please take care when preparing the apples.

This is how you put together the pie. Don't put too much caramel on the apples it will make your pie soggy.




When the edges turn darker and the color is gold the pie is ready.


Turn it upside down.


Cut and serve with icecream.
