I got to know this recipe at a cooking workshop I had with my colleagues. It is super easy and it can be served as a stand alone desert or with ice-cream. As you suspect from the name it is a French pie.
It was such a great fun making it with my colleagues, we enjoyed the process of baking more that the one of eating it :)

ingredients for the dough (makes dough for 3 tarts of 20 cm form each)
- 250 gr flour
- a pinch of salt
- 40 gr basterd sugar
- 150 gr butter
- 2 egg yolks
- 6 spoons of water
ingredients for the apple-caramel filling per form (you will need to multiply x 3 to make all pies)
- 40 gr butter
- 70 gr basterd sugar
- 1,5 kilos of apples (about 4 large apples) - peeled and cut in four.

- Mix the butter with the sugar using your hands.
- Add the eggs and water.
- Add the four.
- Don't over do it with kneeing.
- Make the dough into a ball, cover it in transparent foil and let it rest in the fridge for at list 15 minutes.

Caramel can be very hot, please take care when preparing the apples.
- You will need a large and heavy Tefal type of a pan.
- Cut the butter into cubes and add the sugar.
- Cover with the slices of apples and leave on low fire for half an hour. Don't stir.
- Keep an eye on the apples and when the caramel goes golden bruin it is ready.
- Open the dough and make it flat with a dough roller.
- Put the form on top of the dough and check if it is covered.
- Take the form, put the apples in with some of the caramel.
- Cover with the dough, using the dough roller and cut the edges with a knife.
- Bake the tart in pre-warmed oven (220C) for 20-30 minutes.
- When ready flip the tart in a plate, be careful cause the caramel is very hot.
- Wait for a few minutes and the cut and serve, alone of with ice cream.
