Quick apple and cinnamon cake

This recipe is uniquely quick and unexpectedly tasty. We normally make this in a closed oven pan (ceramic on steel) which we usually cook when we want the meat and veggies to keep moist. Guess what, the same happens if you make a cake in it. It stays so very moist!




If you don't have a ceramic on steel pan, you can use your normal baking pan and cover it with backing paper an aluminium foil to have the same effect.



Fast cinnamon and apple cake

ingredients 
  • 5 eggs
  • 2 tea cups sugar
  • 1,5 tea cups olive oil
  • 3 tea cups all purpose flour
  • 2 tea spoons baking powder
  • cinnamon and raisins to your liking (I use a handful raisins and two tea spoons cinnamon)
  • Powder sugar for serving
  • Some butter for the pan
instructions 
  1. Beat the eggs with the sugar and add the olive oil.
  2. Add the flour, baking powder and cinnamon and raisins.
  3. Cut the apples in cubes and add in the mix.
  4. Butter ceramic on steel pan and pour in the mix. Lid on.
  5. Bake for about an hour in 180C pre-warmed oven.
Tip: If you prepare the apples in advance you can put them in water with lemon, for them not to turn dark.



Another tip: Adding some flour to the raisins will prevent them from sinking to the bottom of the pan.



You don't need to add flour after buttering the pan, this types of pans don't stick. But if you are using another type of pan, by all means add flour. Don't forget to put the lid on or cover with baking paper and aluminium foil.



Take the cake out of oven and let the cake cool down before taking it out of the pan. Serve with powder sugar.
