My whole family has been brought up with these cookies. They are traditional lemon cookies and you can still find similar ones in a couple old fashion pastry shops. One of my favorite pastry shops "Giarlos" closed a couple of years ago. Since then, me and my aunt are in the quest of finding all of their cakes and cookies elsewhere, but very little pastry shops make desserts from scratch.
This is an attempt of making this cookies, which work out quite well :)
ingredients
- 125 butter or margarine
- 200 gr sugar
- 500 gr all purpose flour
- 75 gr yogurt
- zest from half lemon
- juice from half lemon
- 1 tea spoon backing powder
- 1/4 tea spoon backing soda
- 1 egg
- 1 egg yolk
instructions
- Let the butter get softer by taking it out of the fridge.
- Add the backing powder, backing soda into the flour.
- Beat the sugar and the butter/margarine until white.
- Add the whole egg, yogurt and zest in the mix
- Pour the mix into a large bowl.
- Add the flour mix slowly and work the dough with your hands.
- Add flour until the dough doesn't stick on your hands anymore.
- Divide the dough to 30 small balls.
- Grab a ball and roll into a straight line.
- Twist to give the shape as shown in the photo.
- Mix the egg yolk with a fork and use a brush to "paint" over the cookies. This will give them a shine after baking.
- Bake in 180 C for about 15-20 minutes.
- Once they turn gold and you see some cracks appearing on the edge they are ready!
