Melomakarona is the the taste of Christmas

Honey, cinammon, cloves, orange zest and honey... it must be Christmas!

I remember these as long as I remember my self. They are easy to make, and you can eat them as cookies or put them in syrup and serve with nuts as a sweet treat.

This recipe makes 45-50 pieces.

Chocolate volcano explosion

It can't get more chocolaty than this! These small volcanos take about 30 minutes to make, including baking time!

I first saw this recipe in a magazine, but I have expirimented and fine-tuned it to make sure they are successful!

Chocolate volcano explosion

ingredients
  • 125 gr pure chocolaterie
  • 125 gr butter
  • 2 eggs
  • 2 egg-yolks
  • 60 gr sugar
  • 20 gr flour
  • Extra butter and flower for the mini cake forms

instructions
  1. Melt the chocolate and butter in low fire.
  2. Whisk the eggs with the sugar until white.
  3. Add the flour to the eggs mix.
  4. Add the melted chocolate bit by bit, while using the whisker.
  5. Butter the forms and cover with a thin layer of flour.
  6. Pour the mix in 4 mini cake forms.
  7. Bake in 230C for 6-8 minutes.
  8. Let them cool down for 2 minutes and serve.
Melting chocolate in bain-marie and around 40C is the best way to do it!

You can use a deep plastic jar for whisking the chocolate into the eggs & sugar mix. Then you can pour the mix into the forms easily.

Using butter and flour in the forms will make you cakes come off the form easily.

Fill the forms half way, that chocolate is about to explode and it needs all the room ;)

You can keep the forms in the fridge for max two days before baking. Remember to take them out three hours before baking them.

Two minutes after baking, use a plate to flip the cake over. Don't force it, you can us a knife to detach the sides of the cake from the form.

Best served with vanilla ice cream and raspberries ;)

Grandma's cool and smooth dessert

It will take you about 30 minutes to prepare and it needs about another 30 minutes in the fridge.

Leny's hazelnut macaroon dream cake

This is by far the most complicated cake I have ever made. It took me two hours but it was totally worth it... it tastes of dreams!

My mother's in law birthday is coming up, and we celebrated yesterday. She loves hazelnuts and especially this type of cake. It has a very fine taste and it is not particularly sweet.

Heavenly fluffy Mexican Pancakes

These are the perfect weekend breakfast, lunch or...let's call it brunch :)

We used to have these for lunch, every day during our vacation in Playa del Carmen, in Mexico. I had them with ice-cream and strawberries and my husband, Ruud, always with syrup.

The secret to their fluffiness this beating the egg whites separately. And using baking powder of course!

Heavenly fluffy Mexican Pancakes

ingredients
  • 4 eggs
  • 1 pinch of salt
  • 170 gr flour
  • 1 tea spoon baking powder
  • 140 ml milk

instructions
  1. Whisk the egg whites with the salt until stiff.
  2. Mix the flour with the backing powder.
  3. Whisk the yolks with the flour, until smooth.
  4. Add the milk to the smooth mix and whisk.
  5. Fold the dough with the egg whites mix, using a spatula.
  6. Use a big soup serving spoon to pour the dough to a hot lightly oiled pan.
  7. Remember... they are Mexican pancakes, so max cm diameter.
  8. When bubbles staring to appear, they are ready to turn around.
  9. Pile in top of each other and serve warm, with syrup, honey, marmalade or anything else your heart desires!
Mix gently to retain all air from the egg white and use a large soup spoon to spread in the pan.

Don't forget to oil the pan and let it become hot before pooring the mix. Once bubbles appear you can turn the pancake. It takes about a 2-3 minutes to bake.

Grandma's honey and cinnamon baklava flutes

I used to make these baklava flutes together with my grandmother, around Christmas time. The are a traditional treat on the island that my grandmother lives on, Chios. They are easy and they can't really go wrong :)

They will take about an hour to make, including baking time and preparing the syrup. You first need to prepare the flutes, and as they are baking prepare their honey and cinnamon syrup. This recipe makes about 18-24 pieces.

These cookies are named after Jonathan for a reason. He actually helped me make them!

They only take 30 minutes to make, and that is including baking time. They are super easy too!

Meina's exotic banana cake

This cake is the most amazing banana cake I ever tasted. The recipe was given to me by my dear friend Meina and altered by me, so it is only fare to name it after her ;)

You can eat it plain, or use it as base a cake with icing.

It took me a whole day, we had about 40 guest and my husband thought I was mad. I started baking the cakes the day before and I used 2,5 dose, of the recipe below.

the first of them all...

...but which was it?

I have to say that my favorite thing to bake is definitely a cake. And when it comes to a new cake, it is always so exciting to see how it will turn out.

I guess the first one I ever made, should have this privilege. That would be my mom's delicious vanilla and chocolate cake then!

It is an easy one and always comes out great, try it out!
